Agreed, if the temps never go above 175 to 180, then the thermostat is not the issue. I believe that should be a 165degree thermostat. This sounds like it is working fine. I would expect the water...

The Alarm should be going off at 200 degrees. 212 is the boiling point of water and steam doesn't cool effieciently. You stated the engine temp is always between 175 and 200. At 175, I'd be happy....
