Will a Honda EU2000 be enough to start and run my 16000 BTU AC and refrigerator on my 3300 SCR?

No. Starting load exceeds the capacity of the genny.

Install and EasyStart it should handle the spike in the start-up load.

checkout the new Honda EU2200i 200 extra watts might help along with easy-start.
