Default Temperature gauge issues - 2300SC 5.7L Mercruiser

Has anybody have any experience with the temperature gauge over-reading?

We took it out last week and ran the boat at about 25Knts and the temperature gauge was reading nearly 250F (seemingly very hot but the engine sounded fine). At the same time we were monitoring the head temperature with an infrared sensor about 6" away which never went about 160F wherever we aimed it.
There was a very small amount of water bubbling out of the radiator cap as well.
The question is : Is the engine really overheating or not?

Footnote: We have recently had a new impellor and a new thermostat installed.

So you have closed cooling; correct? Being that the IR sensor never read above 160* I suspect the helm gauge isn’t reading correctly. Under Documents of this site you will find the Mercruiser manual for your engine and it will tell you how to test the helm hand sender. The alarm should sound at 200* as well.
