Default Switches beside the Battery Selector Switches

Under the wetbar beside my battery switched appear these switches. I already know by trial and error to get my pump to work to my electric head that I must activate the Port Main Accessory switch. Does anyone know what else these switches are for? Why do they look very different?

Well the top one is a switch, the next two look like fuses for the bilge pumps, and the bottom looks like a breaker

Um, there shouldn't be switches there. Those terminals are for fused connections directly to the battery, so they work even if your battery switch is off.
It allows your bilge pumps to work even with the batteries switched off.
I'm guessing someone added the electric head, and wired it there, rather than a spare breaker at the main dc panel.
I believe that switch should probably be replaced with a fuse.

Wow! I would not have guessed that one at all.

Well, it is just a guess, but I think these boats didn't typically come with the electric flush, and if they did, it would likely have a dedicated dc breaker. Also, from your picture, it looks like someone wrote something above the switch with a marker.

Can you make out what the marker writing says? Do you know what the switch controls. I would not change anything yet until you understand what the switch does and then see if that circuit is protected (fused).
