You should be able to get away with washers for that application. you shouldn't need a backing plate, unless the grill mount is going to double as a ski pylon.

Gas vapor is heavier than air. Any vented gas vapor will drop to the water, not rise to your grill. However, I also mounted mine opposite the fuel vent.
