Now I am following you. When you said the alarm side I thought you meant at the helm but you are saying the alarm sendor vs the gauge sendor.

Sears, Harbor Frieght, Automotive store all have them and not much different. The cost is $50 max.

Your OP is good and while the temp sounds ok I do not trust helm gaffe until I verify with an IR sensor. Also helm gauge only reflects engine temp and exhaust is down stream.

With that said alarm...

I would use a handheld IR temp sensor and take readings of the t-stat housing and exhaust at the rpm where the alarm comes...
