Welcome aboard

It doesn’t sound like you did a sea test so I would wait to see how it performs as is before making any changes.

That's a huge motor for that boat. I don't think you need to upgrade the performance at all, it will already go way faster than you want it to. For prop, let us know what's on it now, but it probably came with a 19 or 21 pitch, depending on drive ratio. Do you know if your drive is a 1.47 or 1.98? Does your boat have smart tabs?

Sea test is a generic term to test the boat on the water. I hope the boat is in good condition as more than one person did as you only to find serious issue latter.

Guess you’ll find out in the spring.

If the engine still has the plastic cowl cover on top the carb the engine and drive serial numbers are on it and you can look up the drive to find its gear ratio.

I can't determine drive ratio by a picture of the stern drive. You may need to do some detective work with a flashlight and look for either 1.47 or 1.98 stamped somewhere on the drive. The numbers will be small font so it will take some looking to find.
At this point, outdrive ratio isn't critical. Take a RPM check at WOT and work from there. My guess is you will be going in excess of 50mph so be ready.

Sound like fun the past owner did tell me it moves fast anyways lol but I did some research n the prop says it’s a 14.5 by 19 I think that’s good

The 3.0 1900 SR's came with a 19p prop and 1.98 drive ratio. My guess is that you have a 1.47. I put the over/under on your 4400 rpm speed at 54mph.

So I can imagen I get a little more after I change the intake manifold and carb I’m not trying to make a fast boat but if it run a bit better with a quadrajef carb then or what u think

A 2000 would have an electric fuel pump. If she can do 50 mph as is I would not spend the money changing to a 4bbl as being a 19 foot boat the water will need to be absolutely flat to be safe running that fast or faster.

My boat originally had a 5.7 with a mechanical fuel pump and I thought it was the last year but boat builders use up old stock that can take a few years to deplete the old engines. The Vortec engines use and electric pump and have a 8 bolt intake manifold instead of the older 12 bolt.

I'd recommend against upgrading the engine at this point. Cheaper performance upgrade, for hole shot anyway, is a four-bladed 19 or 17P blade.
You haven't mentioned if you have Smart Tabs or not. Many people like smart tabs because they reduce bow rise during acceleration. With 17p four blade you may not need tabs because you would be up on plane in an instant. 17P would reduce your top end speed to high 40's, but that is plenty fast for a boat of any size, especially 19 ft.
