You could pull the old stove. Build a box with a flush mounted cover (cutting board). Make the box large enough to store a portable butane stove. You still have a stove if you need one, no more bulky glass top, and usable counter space.

You could knock one out of sheet aluminum. I have a small bench mounted brake I made for just such small jobs.

That is a good idea Shrew we seldom use the stove but that portable butane stove is the way to go. Cheap easy to use and stow.

As long as you maintain the microwave you have one of the required items to make your boat eligible as a second home for tax reasons. You need cooking, water access, and a toilet to make this qualification. Personally I agree that the stove is rarely used, but it could also be a problem when it comes time to sell your boat given that all of the others have them... IMHO

I took my stove out and bought one of those nuwave induction cook tops and it works great. My ryobi 2200 Powers it fine when up river or flat griddle on grill works also. Have a friend that does epoxy work and In fall will redo counter top to fill hole. Hardest decision what color for counter top. Will probably let wife decide then can't blame me if she doesn't like it.
