Mine was doing the same. Seems it had came loose from the epoxy creating an air gap. It looked fine until I wiggled it and it popped loose. Explains why it was intermittent. Worked when it had moisture between the epoxy and the transducer. (air kills the signal)
Here's a quick and somewhat permanent fix I am 'beta' testing.
In the aircraft inspection world, I used 'toilet ring' wax to hold the transducers in hard to reach areas. I applied the same logic to to my boat and it so far has held up well. I thought about re-applying with epoxy but it would take alot of effort to remove the old stuff and you may still get air bubbles reducing it's effectiveness.
I just softened up a piece of wax (new, of course) large enough to cover the end of the transducer about 1/4-3/8" thick. Then just 'push' it down into the existing epoxy. Unless it gets extremely hot (ie: your on fire), it should stay secure and if you ever wanted to check or replace, it is easily removed.

mine was installed using silicone sealant and letting the coffer dam sit for a day..then add either mineral oil or antifreeze.....works great so far....
